			<description><![CDATA[ I'm having the Grandparents over for my son's 1st birthday and I'm making vegetarian enchiladas. I'm having a problem coming up with some sides to go along with them since my MIL is vegetarian (no meats, but does eat dairy). Part of the enchilada filling is rice, so I don't want to do anything else with that. I've browsed my Rick Bayless cookbook, but pretty much everything he suggests has meat in it of some sort and I hateto substitute meat stock for veggie stock since it just never taste... ]]></description>
