I just cooked my first duck breasts this past week. I modified a recipe where you heat a cast iron pan in a 450 degree oven and then when both oven and pan are hot you put the breasts skin (which has been scored) side down so they bake and the skin gets really crisp. They took about 20 minutes, maybe less I watched the temp not the time. I made a simple pan gravy and added some homemade sour cherry jam. It was really good and very fast and easy.
I even saved the duck fat for the dogs
We cook them a fresh meal a couple times a week (usually cheaper beef and leftover veggies).
